Description
The sweet peppers of Altino combined with Italian tomatoes, aubergines, onions, carrots and only extra virgin olive oil and no flavourings: this is how De Cecco’s Sugo alle Verdure (Vegetable Sauce) was created, a tempting recipe created by the great Chef Heinz Beck, fresh, tasty and fragrant. Altino is a small town in the province of Chieti, nestled on a rocky spur overlooking the Aventino Valley. The characteristic peppers of the area are small, sweet, horn-shaped, deep red, called in the local dialect ‘a cocce capammonte’, i.e. head upwards, because this pepper grows upwards. In traditional cooking, it is used for a wide variety of dishes, from starters to main courses of meat and fish. It is important to remember that this prized pepper grows in the WWF Oasis of Serranella and Regional Nature Reserve, which is located within a Special Area of Conservation in the municipalities of Casoli, Altino and Sant’Eusanio del Sangro (CH). The area covers approximately 302 hectares (plus another 200 hectares of buffer zone) in the lower Sangro Valley at the confluence with the Aventino River.
