Ditali Rigati are part of the family of very short, straight-cut pasta and originate from Campania. Inspired in shape by the sewing accessory of the same name, but open at the top, Ditali Rigati, thanks to their ridges and porosity, are versatile interpreters of dry pasta with tomato or soups and minestrone. Ditali Rigati are particularly suitable for the preparation of dry pasta with different sauces ranging from meat to fish, from vegetables to legumes. The secret to a perfect recipe is that the sauces reach a consistency sufficiently liquid to be collected inside the pasta.
