Description
Of the fettucce family, Fettuccelle originate in central and southern Italy.
The condiments recommended for Fettuccelle are tomato-based sauces, with vegetables and aromatic herbs and quick spicy sauces, prepared with extra virgin olive oil, garlic, chili pepper, anchovies and capers.
Also recommended are fish sauces with shellfish and seafood and “white” sauces prepared with cream, mascarpone, soft and melting cheeses and with the addition of spices such as saffron, horseradish, curry and ginger.
