Mortadella Suprema is a sausage made with finely minced pure pork meat and enriched with cubes of pork fat taken mainly from the neck of the animal. Its flavor is enhanced by the addition of selected spices to give the palate a more decisive aromatic note.
The origins of its name derive from the tool with which the Romans used to mince the pork meat for this sausage, the mortarium, mortar, or from the plant used to flavor the mortadella meat before it was stuffed, the myrtium, myrtle.
