Central Canestrato pepato sheep cheese
Table or grating cheese.
The paste is compact, semi-hard or hard, white or straw-colored, with amber shades where the peppercorns are.
The pepper is added by hand during processing so as to have a homogeneous distribution. The flavor is strong and spicy, strongly characterized by the fragrance of black peppercorns.
