In Italy, pasta reale or almond paste is a confectionery preparation used in the preparation of various desserts in Sicilian, Apulian, Salento and Sardinian cuisine. Under the name ‘pasta di mandorle’, it has been officially recognised as a traditional Sicilian food product and included in the list of traditional Italian food products (P.A.T.) of the Ministry of Agriculture, Food and Forestry (Mipaaf). Almond paste is used in many recipes around the world.
